Aunt Boot developed this fantastic recipe for a treat that is really pleasing. If thin and crispy cookies are your thing, you’ve got to try these.
Ingredients
- 1 cup Butter, softened
- 2 cups Sugar
- 2- Eggs
- 2 Tbs Satsuma Orange Zest
- ¼ cup + 1 Tbsp Fl Ga Citrus Splash Satsuma Juice
- 2 ½ cups All-Purpose Flour
- 1 tsp. Baking Powder
- ½ tsp. Baking Soda
Directions
- Preheat oven to 350 degrees
- In medium bowl, combine flour, baking soda, and baking powder. Set aside.
- In large bowl, combine butter and sugar on high speed until fluffy. Beat in eggs, zest, and satsuma juice until well blended.
- On low speed, beat in flour mixture just until blended.
- Drop by tablespoon onto parchment paper lined cookie sheet. (cookies will spread about two inches)
- Bake 14-16 minutes or until edges are slightly brown.
Note: When I don’t have fresh satsumas, I use two large Navel Oranges for zest!
