Satsuma Cookies

Aunt Boot developed this fantastic recipe for a treat that is really pleasing. If thin and crispy cookies are your thing, you’ve got to try these.

Ingredients

  • 1 cup Butter, softened
  • 2 cups Sugar
  • 2- Eggs
  • 2 Tbs Satsuma Orange Zest
  • ¼ cup + 1 Tbsp Fl Ga Citrus Splash Satsuma Juice
  • 2 ½ cups All-Purpose Flour
  • 1 tsp. Baking Powder
  • ½ tsp. Baking Soda

Directions

  1. Preheat oven to 350 degrees
  2. In medium bowl, combine flour, baking soda, and baking powder. Set aside.
  3. In large bowl, combine butter and sugar on high speed until fluffy. Beat in eggs, zest, and satsuma juice until well blended.
  4. On low speed, beat in flour mixture just until blended.
  5. Drop by tablespoon onto parchment paper lined cookie sheet. (cookies will spread about two inches)
  6. Bake 14-16 minutes or until edges are slightly brown.

 

Note: When I don’t have fresh satsumas, I use two large Navel Oranges for zest!
